Serves 8

Prep time: 20 minutes

Cook time: 35-40 minutes


Ingredients:

  • 4oz oats
  • 4oz ground almonds
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 3 tbsp coconut oil
  • 2 eggs
  • 3 tbsp honey
  • 2 apples, peeled and finely sliced
  • Handful of flaked almonds

Method:

  1. Preheat oven to 180C/350F/Gas 4 and line a cake tin with baking parchment.
  2. Blend the oats until fine like flour. Combine with the ground almonds, baking powder and cinnamon.
  3. Melt the coconut oil and blend with the eggs and honey. Add to the flour mix.
  4. Pour a third of the mix into the tin. Add slices of apple until covered. Add another layer of mixture followed by the remaining apple slices. Pour remaining mix on top and sprinkle with flaked almonds.
  5. Bake for 35-40 minutes.
  6. Serve with a spoonful of yoghurt and a sprinkle of cinnamon.
