Swapping out a regular pizza base for this cauliflower alternative provides a lower carbohydrate option, and helps to reduce your intake of commercial white wheat flour.


Ingredients:

  • 1 cauliflower head, grated or blitzed
  • 100g ground almonds 
  • 2 eggs, beaten
  • 1 tsp dried Mediterranean herbs 

Method:

  1. Line a baking tray with baking parchment and grease with oil. Preheat the oven to 200C/180C fan.
  2. Cook the grated/blitzed cauliflower in a pan with a little olive oil for five minutes.
  3. Squeeze out the moisture using a clean tea towel, and mix with the ground almonds, eggs and Mediterranean herbs.
  4. Place the cauliflower mix into the centre of your baking tray, then spread out into a circular shape. To make a ‘crust’, just make it a little thicker at the edges. Bake in the oven for 15-20 minutes until golden.
  5. Add your delicious toppings and heat it up in the oven again.
