Searching for a quick weeknight winter warmer? Look no further than this quick and easy bean stew. Add sausages for an extra protein punch.


Ingredients:

  • 1 tbsp olive oil
  • 2 cloves garlic, finely sliced
  • 1 onion, finely chopped
  • 20g fresh rosemary
  • 1/2 tsp chilli flakes
  • 1 tbsp dried oregano
  • 100ml white wine
  • 1 vegetable stock cube
  • 200g tinned chopped tomatoes
  • 400g tin butter beans, drained and rinsed 

Optional

  • Sausages; meat or vegetarian

Method:

  1. Heat the olive oil in a large saucepan. Sauté the onions, garlic and rosemary for five minutes, until the onions are soft and translucent.
  2. Add the oregano, chilli flakes and white wine and cook for 3-4 minutes until it reduces by half.
  3. Crumble in the stock cube, tinned tomatoes and 200ml water. Add the beans and continue to simmer for 15-20 minutes until the sauce thickens. Season to taste.
  4. If using, cook the sausages separately. Once cooked, the sausages can also be placed to simmer along with the beans.
  5. Serve with steamed greens, or sweet potato mash for a comforting, economical meal.
